Chinese sausage

This particular Chinese sausage is Cantonese lap cheung, which is one of the most popular cured meats. This one is made of pork, but there are also liver sausages.

Lap cheung can be steamed separately on a dish, pictured below, and also sliced, and fried with other ingredients or with vegetables, next two photos shown below.

A popular way of cooking this is to add it to boiling rice. Bring rice to a boil and when the water is almost absorbed, add sausage, cover and continue cooking until rice is cooked. ,
