This fried onion is a great accompaniment for hot dogs, hamburgers and steak. In Australia, they cook the onion, right over their barbie (Ozzie for barbecue).
My version has soy sauce in it. Make this ahead of time and serve at room temperature.
Caramelized Onion
Serves 10-12
Preparation time: 5 minutes
Cooking time: 10 minutes
1 large onion, sliced crosswise
2 tablespoons vegetable oil
¼-½ teaspoon sugar
1 tablespoon soy sauce
Heat a pan. Add oil. When oil is shimmering, add onions and fry quickly for 1 minute. Lower heat and continue to fry for another 1-2 minutes. Add sugar, and continue to fry until onion is limp, tender and slightly brown, about 3-4 minutes. Add soy sauce and mix well. Fry for 2-3 minutes. Remove from heat and transfer to a bowl.

Ooops. Thanks, Mary, for pointing this out. I’ve edited it; meant to be sugar instead of salt. You can put about 1/4- 1/2 teaspoon sugar, to taste. Try it and let me know.
