Talk about amazing table presentations. This table was set up and ready by 5.45 AM! We had to put out all our goodies–and get the coffee brewing–before our cycle class began at our gym.
Call us gung-ho. Our group of up to 35 people are up every week day before the crack of dawn to get to class to cycle like maniacs or pump 1000 reps in one hour. Yup, that’s us. We’re unbeatable.
At a Back to School breakfast last week, our Morning Crew rolled out these delicious power packed breakfast foods: Morning Maple Balls, Earth Balls, Date Nut Balls and Date Nut Coconut Balls. We also had Breakfast Hummus, Blueberry Scones, Summer Rolls, and Avocado Smoothie. I made Deviled Eggs.

Kathleen rolled out two types of bites: Date Nut Bites, (pictured left, below) which has dates and peanuts; and Energy Bites, (pictured right, below) which has dates and mixed nuts, coconut and cocoa. For recipes on the Date Nut Bites and Energy Bites chocolate balls, click here.
Krista made Earth Balls, which has peanut butter, honey, cocoa, raisins, coconut, chocolate chips, sesame seeds and chopped nuts. Recipe is here.
Kathy made Morning Maple Balls, which is gluten free. Click here for recipe. Instead of making bars, Kathy rolled them into balls. Her coffee was brewing as we were pedaling like mad. She also made sure there were baggies and to-go cups for those who had to rush to work to pick something up. Unbeatable.
Prasanthi’s summer rolls were beautiful and delicious! I promise to post about it soon.

Theresa is shown here pouring the healthful avo smoothie. She said she simply blended one avocado with some yogurt, a handful of spinach, a handful of blueberry, three strawberries, half an orange, a teaspoon of flax seeds, a dash of cinnamon and a half cup of ice. Or some combo like that. It made almost half a gallon. At 5 in the morning who needs exact measurements?
