Made of rice flour, rice paper is most commonly used as wrapper for Vietnamese summer rolls. But it is also very popular for wrapping a variety of grilled meat, chicken, tofu and seafood and cut vegetables, including carrot, radish, cucumber, lettuce, and mint.
To soften rice paper, dip rice paper into deep plate of warm water and quickly lift it up. Spread it on a cutting board and fill it with your favorite fillings. Don’t dip the rice paper in the water for too long as it will soften too much and its sides will stick to each other, making it hard to spread it out.
