Peach Cobbler

The thing about picking your own peaches and perfectly ripened ones is that you have to eat them very quickly. Even in the refrigerator, they don’t keep well. (Read about my Peach Picking here.)

Time to make Peach Cobbler. My friend Ann Sciambi gave me this recipe more than 20 years ago, and I use it often. I like this recipe because the dough is more like biscuit than cake. It looks nice and knobbly and I like the textured crispy bits.

Confession: I didn’t want to use up all my peaches and didn’t have enough to fill four cups. Therefore my dough filled the surface of a smaller casserole dish I used. If I had used the suggested casserole size with the correct proportions, the baked dough would be beautifully spotted amidst the bubbly peaches. This is a good recipe.

Ann’s Fresh Peach Cobbler

Serves 6
Preparation time: 15 minutes
Cooking time: 45 minutes

½ cup sugar
1 tablespoon cornstarch
1 tablespoon lemon juice
4 cups fresh peeled and sliced peaches
¼ teaspoon cinnamon
1 cup flour
1 tablespoon sugar
1½ teaspoon baking powder
½ teaspoon salt
3 tablespoons butter
½ cup milk

Heat oven to 400 degrees Fahrenheit. Blend sugar and cornstarch in medium saucepan. Stir in peaches and lemon juice. Cook, stirring constantly until mixture thickens and boils. Boil and stir one minute. Pour into ungreased 2-quart casserole. Keep fruit mixture hot while preparing biscuit topping.

Put flour, sugar, baking powder and salt into a bowl. Add butter and milk. Cut through butter six times. Mix dough to form a ball. Drop dough by six spoonfuls onto hot fruit. Bake 25-30 minutes or until topping is golden brown.

Serve warm, with whipped cream or ice-cream.

Ice cream doesn’t photograph well, especially next to warm peaches. So my daughter Alison added some doughnut peaches and blueberries to try to make it look better. May look pretty but the baked peaches taste better on its own.

NOTES:

–To peel the skin of fresh peaches, carefully submerge peach in boiling water for 10-20 seconds and remove. Skin will slip off fruit easily.
