Stir-fried Beef With Green Onions

This is a classic Cantonese dish, offered in restaurants but also cooked as a home dish.

Stir-fried beef can be fried with any kind of vegetables—but popular combinations include spring onions with ginger, broccoli, gai lan, green peppers and leeks.

Different beef cuts may be used–tenderloin, cut in wider slices; sirloin in strips; or flank for its rich flavor in thin slices.

One way to cook this is to fry the marinated beef and remove from it the hot pan before it is fully cooked. Then the vegetable is fried and the beef tossed back in and combined with the vegetables. This is typically how Chinese stir-fry meat with vegetables.

Sometimes vegetable is cooked first and plated on a dish. Then the beef is fried, a sauce sometimes added and then added to the veggies on the dish. Recipe below is done this way. Carrot is added for color.

Stir Fried Beef With Green Onions

Serves 2-4
Preparation time: 20 minutes
Cooking time: 10 minutes

¾ pound beef sirloin or tenderloin, sliced to ¼ inch thickness
4 tablespoons oil
8 ounces green onion, sliced and loosened
A few strips of carrot
2 cloves garlic, sliced
½ teaspoon salt

Marinade
2 tablespoons soy sauce
¼ teaspoon sugar
1 teaspoon sesame oil
1 tablespoon rice wine
1 teaspoon cornstarch

In a deep plate marinate beef in light soy sauce, sugar, sesame oil, rice wine and cornstarch for at least 15 minutes.

Heat a non-stick frying pan and add half the oil. Fry green onion, carrot and garlic until onion start to get limp, about 2 minutes. Season with salt and transfer to a platter.

Return pan to heat. Add rest of oil and when oil is shimmering spread beef in one layer in pan and let meat singe before quickly turning the pieces over, section by section. Fry to mix well. As soon as beef turns color, transfer beef over vegetables.

Do not overcook beef. Serve immediately.

NOTES

The green onion used here is different from spring onion. You can also use spring onions, chives, or scapes.

If you live near a Korean supermarket offering bulgogi, marinated meat, you can use this beef and fry it with vegetables.

Variations

–Instead of onions, use leeks, chives, gai lan, green pepper and broccoli.
