Dan bing crepes for breakfast

We made this breakfast when I ran out of bread, the snow had started coming down slowly (in March!) and I was too snug to leave the house.

I had some dan bings in my freezer. My friend Chi had purchased them for me and said they were as good as home made.

A popular breakfast food, dan bings are like crepes or soft tacos or Indian chapati. They are made just with flour and water. When I lived in Taipei, I used to stop by a small neighborhood stall, get my dan bing and walk to work munching on my breakfast.

You can put in pork, and onions. Chi who spent the night cooked some up for us. We debated about whether to add ham and onion and mushroom, but too lazy to chop up food, we only added shredded cheese. We used sharp cheddar but you can use your favorite.

Dan Bing With Cheese

Preparation time: 5 mins
Cooking time: 8-10 minutes

2 frozen dan bings (don’t defrost)
2 eggs, well beaten with ¼ teaspoon salt
½ cup shredded cheese

It’s best to use a non-stick pan but we used a stainless steel one. Heat pan till hot. Add oil and tilt pan to oil the surface well.

Pour half the beaten egg on to pan. Remove dan bing from protective lining and place over egg. Press dan bing down gently.

 

Lower heat to medium and allow egg to set, about ½-1 minute. Shake pan gently. If egg and dan ding sticks to pan, continue to cook for half a minute. Shake again. If the egg and dan bing slides along pan, it is ready to flip crepe over. You may flip it over with a spatula.

Add cheese over the dan bing and leave to fry other side of dan bing for about a minute.

With a spatula fold one third of the dan bing over and then flip it over again.

 

Transfer dan bing to plate and cut into small pieces. Serve with sweet chili sauce. Eat immediately.
